Santa Cruz Mountains
Lilo vineyard is organically farmed by Assiduous Wines and thus the wine in hand is positively Assiduous from ground to bottle. The grapes were hand harvested at 23° Brix. Indigenous yeasts and bacteria carried out both primary and secondary fermentations. During the fermentation 25% whole clusters were used and the rest was de-stemmed. The wine was aged on lees in French oak barrels, one of which was once used giving it just a kiss of oak.
